I know the title is cheesy as are some egg salads sometimes. But eggs are a great way to add protein into your diet so try this recipe for a tasty, energy boosting pick me up midday meal.

RECIPE for 1
-1 hard boiled egg chopped
-1/4 avocado, cubed
-5-6 grape tomatoes,halved
-1/3 of a long cucumber, peeled and cut into chunks
-3 stalks celery, finely sliced
-2 tbsps pesto dressing (blend together 1/4 cup olive oil, 1 cup packed basil leaves, pinch of salt, 6 walnut halves or you can use pine nuts but I didn’t have any on hand)
Combine ingredients and mix into pesto. Add oil or salt to taste. Refrigerate or serve immediately.
Period.
