Vegan Zucchini Brownies

These treats are eggless and dairy free and definitely a favourite.

This recipe isn’t very sweet…for more sweetness you can put 1/2 cup chopped bakers chocolate or chocolate chips. I didn’t ? I also tried adoing a ripe banana to the mixture for extra sweetness and moisture.

  • 2 cups flour
  • 1/2 cup unsweetened good quality cocoa powder
  • 1-1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup oil
  • 1-1/3 cup sugar
  • 1 Tbsp. vanilla
  • 2 cups shredded zucchini
  • (1 ripe banana, optional. For a moist brownie ️cook a few minutes longer when adding banana.)
  1.  Heat oven to 350°F. Line 13×9-inch pan with parchment, with ends of parchment extending over sides. Spray with Pam.
  2. Combine first 4 ingredients in large bowl.
  3. Whisk oil, sugar and vanilla until blended. Add flour mixture. Stir in zucchini. Mixture will resemble coarse crumbs.
  4. Press zucchini mixture onto bottom of prepared pan.
  5. Bake 25 to 30 min. Let cool. Use parchment paper to remove from pan. (I used store bought frosting because I was short on time ?)
