These treats are eggless and dairy free and definitely a favourite.
This recipe isn’t very sweet…for more sweetness you can put 1/2 cup chopped bakers chocolate or chocolate chips. I didn’t ? I also tried adoing a ripe banana to the mixture for extra sweetness and moisture.
- 2 cups flour
- 1/2 cup unsweetened good quality cocoa powder
- 1-1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup oil
- 1-1/3 cup sugar
- 1 Tbsp. vanilla
- 2 cups shredded zucchini
- (1 ripe banana, optional. For a moist brownie ️cook a few minutes longer when adding banana.)
- Heat oven to 350°F. Line 13×9-inch pan with parchment, with ends of parchment extending over sides. Spray with Pam.
- Combine first 4 ingredients in large bowl.
- Whisk oil, sugar and vanilla until blended. Add flour mixture. Stir in zucchini. Mixture will resemble coarse crumbs.
- Press zucchini mixture onto bottom of prepared pan.
- Bake 25 to 30 min. Let cool. Use parchment paper to remove from pan. (I used store bought frosting because I was short on time ?)
