I was craving a Starbucks frappuccino today so I created this protein rich, low calorie version of my fave drink. No whip, thanks.
For 2 people (or even 1 person if you want ?)
- 1 cup coconut milk
- 2 tablespoons chia seeds
- 1 tablespoon hemp hearts
- 1 scoop chocolate protein powder (I use hemp protein, it’s not as sweet)
- 1 tablespoon toasted slivered coconut
- 1 tablespoon dark chocolate chips (you can use more if you wish)
- 1 cup crushed ice
- 1 shot cold or room temp espresso coffee
- Combine chia seeds, almond milk, protein powder and hemp hearts. Stir well using a spoon and let the mixture stand on the counter for about 5 minutes.
- Add coconut, crushed ice and chocolate chips and blend well.
- Add espresso coffee and blend until slushy consistency.
- Pour and serve immediately.
