An easy and tasty salad filled with protein and nutrients to keep you fueled for the day. I made this here in Italy because it’s quick and didn’t need any cooking time (except for the quinoa). I put white beans in mine but I made it again the next day with tuna cause I loved it so much.
Ingredients (for 2-4 people)
- 2 long Roma tomatoes sliced into discs
- 1/2 avocado cubed
- 3/4 cup cooked quinoa
- 1/2 cup white cannelli beans
- 2 cups arugula
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt to taste
Method (omg so easy I’m embarrassed to even say that there’s any method to it ?)
- Combine first 4 ingredients in a bowl (add tuna here too if you wish).
- Dress with oil, vinegar and salt to your liking.
- Pour over a bed of arugula right before serving.
Excuse me, I’m getting hungry just thinking about this salad. I preferred it with tuna so I think I’m going to make myself some more???????
