Avocado Tomato Salad with Quinoa and Arugula


An easy and tasty salad filled with protein and nutrients to keep you fueled for the day.  I made this here in Italy because it’s quick and didn’t need any cooking time (except for the quinoa). I put white beans in mine but I made it again the next day with tuna cause I loved it so much. 

Ingredients (for 2-4 people)

  • 2 long Roma tomatoes sliced into discs
  • 1/2 avocado cubed
  • 3/4 cup cooked quinoa
  • 1/2 cup white cannelli beans
  • 2 cups arugula
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt to taste

Method (omg so easy I’m embarrassed to even say that there’s any method to it ?)

  1. Combine first 4 ingredients in a bowl (add tuna here too if you wish).
  2. Dress with oil, vinegar and salt to your liking. 
  3. Pour over a bed of arugula right before serving.

Excuse me, I’m getting hungry just thinking about this salad. I preferred it with tuna so I think I’m going to make myself some more???????
