Can I even say that? Well there’s no dairy, no oil or butter and less sugar due to the sweetness of the bananas… So I guess they’re not too bad. Plus it took more time to find my muffin tin than it did to whip these up. Too easy.
Recipe for 12 muffins (even though I later wished I would have doubled it):
- 1 cup flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 or less cocoa powder
- 1/4 tsp salt
- 2 eggs
- 1/2 cup coconut milk (you can use regular milk or Greek yogurt)
- 1/3 cup mashed banana (or applesauce)
- 1/2 cup coconut or organic sugar (or less if you don’t want them too sweet)
- 1 cup grated zucchini
- Preheat oven to 350•c. Line muffin tin with paper liners.
- Combine first five ingredients and mix. Set aside.
- Beat eggs, sugar, milk. Add banana and zucchini.
- Add remaining ingredients mix until just combined.
- Divide evenly into 12 muffin liners. Bake for 17-19 min until top hardens or toothpick comes out clean.
