Great entertaining dish. I usually like mussels in their own water but this is a welcome exception.
For 5 lbs mussels (about 4 people depending on how much they eat ?). I serve it as an appetizer alongside other seafood apps:
- 5 lbs mussels, larger mussels require more filling (about 45-60 mussels depending on size)
- 1/2 cup white wine
- 1/4 cup olive oil
- 2 tbsp butter melted
- 2 cloves garlic, finely chopped
- 1/2 onion finely chopped
- 3 tbsp parsley finely chopped
- Salt, pepper
- 1/2 cup seasoned bread crumbs, plus more for sprinkling
- Juice from 1/2 lime
- 1/4 cup sweet chili sauce
- 3/4 cups shredded mozzarella cheese
Directions
- Mix all the ingredients together in a bowl except for mussels. Should have a bit of a runny consistency.
- Scrub the mussels. Place them in a heavy skillet or pot. Cover and steam over a medium flame until the mussels open.
- When cool enough to handle, remove one half shell from each mussel. Place the other half on a baking sheet.
- Place a spoonful of mixture on mussels and sprinkle with crumbs.
- Bake at 425°F just long enough to heat through.
- Serve on hot plates.
