Makes about 30 small meatballs.
Ingredients
- 1 small tub (250g) soft ricotta cheese
- 250g lean ground turkey
- 1 egg
- 1/2 cup seasoned breadcrumbs
- 8-10 slices of prosciutto cut in half lengthwise and then cut each strip in half
- 1 tub Summer Fresh Tzatziki
Procedure
- Combine first four ingredients with a fork or by hand. Form small meatballs with a tablespoon full of mixture. It should fit in the palm of your hand. Shape into elongated rolls and wrap each one with prosciutto.
- Place on a parchment paper lined baking tray. Bake at 380F for 20 min.
- Let cool before serving with tzatziki.
