Does anyone else desperately need a dose of yellow and orange in their lives! This pinã colada inspired breakfast is a good fix for the winter blues.
Combine 1/2 cup coconut milk with 2 tbsp chia seeds and 1 tbsp tropical (Orange mango flavour by vega protein) and stir with a spoon. Let sit for 5 min.
Add more than 1/2 cup frozen or fresh organic mango cubes and 2 tbsp shredded coconut.
Add 1 tbsp almond butter and blend. Add 1/2 cup crushed ice and blend. Garnish with mint leaves and some chopped coconut and mango.
