Guilt free Gluten Free Waffles

Wheat flour can leave me feeling sluggish and bloated. I try to stay away from it as much as possible but when I really have cravings, I look to gluten free to help. 

  • 1 cup gluten free pancake mix. I used GoGo Quinoa. You can find more of their products at GoGo Quinoa website
  • 1 cup milk or dairy free milk
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon
  • 1 tbsp sugar
  • 2 tbsp melted butter
  • 2 eggs, separated
  1. Whisk together pancake mix, milk, egg yolks, vanilla, cinnamon, sugar and butter. 
  2. Beat egg whites until fluffy. 
  3. Fold egg whites into the batter. 
  4. Pour over a greased hot waffle iron. Let cool over a wire rack. 
  5. Top with fresh fruit or toppings of your choice.
