Wheat flour can leave me feeling sluggish and bloated. I try to stay away from it as much as possible but when I really have cravings, I look to gluten free to help.
- 1 cup gluten free pancake mix. I used GoGo Quinoa. You can find more of their products at GoGo Quinoa website.
- 1 cup milk or dairy free milk
- 1/2 tsp vanilla
- 1/4 tsp cinnamon
- 1 tbsp sugar
- 2 tbsp melted butter
- 2 eggs, separated
- Whisk together pancake mix, milk, egg yolks, vanilla, cinnamon, sugar and butter.
- Beat egg whites until fluffy.
- Fold egg whites into the batter.
- Pour over a greased hot waffle iron. Let cool over a wire rack.
- Top with fresh fruit or toppings of your choice.
