Just when you thought I couldn’t add quinoa to anything else… I did. These chocolate chip cookies pack a punch, being both chewy and crunchy at the same time.
I can’t promise that they are super healthy…they have butter and sugar in them (I’m working on that)…but they do have quinoa giving them that protein that will keep you fuller longer. ?????? Just try them for yourself. You won’t be disappointed. Super easy and non fail ??????
Ingredients
Makes about 18 cookies. Prep and baking time 30 min.
- 1/2 cup butter, melted (or less)
- 1/2 cup sugar (I used organic sugar)
- 1 egg
- 1 cup flour
- 1/2 cup mini cholcoate chips
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup cooked quinoa (or more)
Directions:
- Cream butter, sugar and egg. Mix really well until there are no lumps.
- Add flour, baking powder, quinoa and baking soda. Mix on low.
- Add chocolate chips by hand.
- Put batter in fridge and warm oven to 375 F.
- Place 1 tbsp of dough on a parchment lined baking sheet and bake for 12 minutes. Remove from oven and let cool on a rack.
