Calamari Bruschetta

Bruschetta is a wonderful appetizer that is enjoyed by almost everyone.  I made this up one day while trying to think of what to bring as an appetizer to a friend’s house.  It’s super easy to make and transport, just add the toasted crostini before serving as they may get soggy after.

For 4-6 people, difficulty: easy, time: 35 minutes (including prep)

Ingredients:

  • 1 package cleaned calamari rings (300g)
  • 1 clove garlic, minced
  • 1/2 onion, diced
  • 3/4 cup crushed tomatoes
  • 3/4 cup red or green olives (I used both)
  • 5 tbsp olive oil
  • 1/4 cup white wine
  • 1 tbsp chopped parsley

Directions

  1. Add garlic and onions to olive oil and cook over medium high heat for a few minutes.  Do not let the garlic brown.
  2. Add calamari and white wine, cooking until most of the wine has evaporated.  Add olives halfway through.
  3. Add crushed tomatoes and use your fork to mash the pieces.  You can also use a tomato puree if you do not wish to have pieces of tomatoes. Cook for about 15-20 min.  Salt to taste.
  4. Allow temperature to drop and sprinkle with chopped parsley.  Toast thin slices of baguettte. Add them to the sides of the pan so that half of the bruschetta is sticking out. Serve with a spoon so that guests can spoon the bruschetta topping over the bread slices.
