Strawberry Banana Chia Seed Parfait

The word “chia” derives from the mayan word for “strength” mainly because they pack so many nutrients for such a small seed. They have many health benefits, but mainly they are high in fiber, protein and omega 3, with very few calories. Read more for a full list of  health benefits of chia seeds.

They can be eaten raw,  sprinkled on yogurt, salads or cereal however soaking them is better because it allows for maximum nutrient absorption. For 1 Jar (double recipe to make 2 jars) you will need:

  • 2 tablespoons chia seeds
  • 1/2 cup coconut milk
  • 1 tsp maple syrup or 1 tsp natural honey (optional)
  • 1 cup frozen bananas
  • 1 cup frozen strawberries
  • 1 fresh banana (for garnish)
  • shredded coconut, dark chocolate chips for garnish (optional)

Bottom layer: soak 2 tbsp chia seeds in 1/2 cup coconut milk. Stir and let sit for 20 min at room temp or 2 hours in the fridge.

Pink layer: blend 1 cup frozen strawberries with 1 cup frozen bananas on high. Scrapes sides and add a few drops of water or coconut milk if the mixture is too thick and won’t blend smoothly.

Assembly: Put the chia seeds in a small mason jar.  Slice fresh bananas and press on the side of mason jar (in heart shapes if possible). Add frozen cream (pink) layer. Top with sliced strawberries, shredded coconut, dark chocolate chips and hemp hearts. Refrigerate or serve immediately.
