
The trick to this recipe is in the ‘soured’ milk. It makes a nice fluffy batter.
Also, make sure you measure baking soda, baking powder and salt exactly.
Finally, be very careful not to burn them. I put my stove on medium or a bit lower. You have to watch as they cook quickly. The outside browns very quickly too.
Ingredients for 2-3 people (10 medium sized cakes):
- 3/4 cup milk
- 2 tablespoons white vinegar
- 1 cup flour
- 2 tablespoons sugar
- 1 egg
- 2 tablespoons melted butter
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Directions:
- Combine vinegar and milk. Let sit 5 min.
- Mix flour, sugar, baking powder, baking soda and salt in a bowl.
- Add egg and butter to the milk and whisk.
- Pour the mixture into the flour mixture and combine.
- Spray griddle or nonstick pan with cooking spray. Put on medium heat.
- Spoon onto griddle and cook for a minute or two, flip and cook on the other side.
