Tall fluffy pancakes…
are actually attainable at home. I never thought this would be possible as I’ve been endlessly searching for the combination of ingredients or procedure that would take my pancakes out of their lifeless misery. The secret: soured milk. 2 tablespoons of vinegar are added to milk and left to sit for 5 minutes before combining with other ingredients to make the perfect fluffy pancakes.
Ingredients:
- 3/4 cups milk
- 2 tablespoons white vinegar
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons melted butter
- 1 egg
Procedure:
- Put vinegar in milk and let sit for 5 minutes to sour.
- In the meantime, combine flour, sugar, baking soda, baking powder and salt in a bowl.
- Add melted butter and egg to milk and whisk.
- Add this mixture to the flour mixture and combine with whisk.
- Heat pan (medium high heat) and place a tablespoon of melted butter or cooking spray. Pour a small scoopful of batter. Leave 1-2 min and flip once. Cook on other side for same amount of time.
