Tall fluffy pancakes…

are actually attainable at home. I never thought this would be possible as I’ve been endlessly searching for the combination of ingredients or procedure that would take my pancakes out of their lifeless misery. The secret: soured milk. 2 tablespoons of vinegar are added to milk and left to sit for 5 minutes before combining with other ingredients to make the perfect fluffy pancakes.

Ingredients:

  • 3/4 cups milk
  • 2 tablespoons white vinegar
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter
  • 1 egg

Procedure:

  1. Put vinegar in milk and let sit for 5 minutes to sour.
  2. In the meantime, combine flour, sugar, baking soda, baking powder and salt in a bowl.
  3. Add melted butter and egg to milk and whisk.
  4. Add this mixture to the flour mixture and combine with whisk.
  5. Heat pan (medium high heat) and place a tablespoon of melted butter or cooking spray. Pour a small scoopful of batter. Leave 1-2 min and flip once. Cook on other side for same amount of time.
